Ingredients
4slicessturdy white bread approximately 1/2 inch thick
1cupPimento Cheese Spread
2eggs
2tablespoonsbutter
Instructions
Divide the pimento cheese spread evenly between two slices of bread and spread into an even layer. Top the cheese with the remaining bread slices and, using a 3 inch biscuit cutter, cut a hole in the center of each sandwich. Set aside.
Place a large skillet over medium high heat and melt the butter to coat the pan. Place the two sandwiches and the bread rounds in the pan.
Cook the sandwiches for 1 minute, then crack an egg into the middle of each sandwich being careful not to break the yolk. Continue cooking until the egg starts to set, approximately 2 more minutes.
Carefully, flip each sandwich (and sandwich round over) and continue cooking for an additional 2-3 minutes or until golden brown on each side.
Transfer the sandwiched to a plate or serving platter. Serve immediately with the mini round grilled cheese sandwiches.
Notes
Pimento cheese can be made up to 3 days in advance and stored in the refrigerator in an airtight container.
