Ingredients
1poundlean ground turkey
1 1/2teaspoonchopped fresh sage
1teaspoonchopped fresh thyme
1teaspoonchopped fresh rosemary
1/2teaspoonnutmeg
1teaspooncayenne
3teaspoonspure maple syrup
1/2teaspoonkosher salt
1/2teaspoonfresh ground pepper
Instructions
In a large mixing bowl, combine the turkey, sage, thyme, rosemary, nutmeg, cayenne, syrup, salt and pepper until all the ingredients are thoroughly incorporated. (Using your hands is the best method)
Form the meat mixture into a log approximately 4 inches in diameter and roll tightly in plastic wrap.
Wrap the sausage log in foil and place in the freezer for 1 hour to allow it to firm up. This makes slicing easier.
Remove the sausage from the freezer and unwrap. Using a serrated knife, cut the sausage into 1/2 inch patties.
In a large frying pan, cook the patties over medium heat until brown and turn over. Continue to cook until cooked through.
Transfer to a platter and serve immediately or freeze in an airtight container.
Notes
Turkey Sausage can be formed into a roll and frozen for up to 3 months. Thaw completely before slicing.
