Ingredients
1 16-ouncepackage elbow macaronicooked according to package and drained
1/2cupdiced sweet picklesI prefer the sweet gerkins for this recipe
1/2cupminced carrotI use the matchstick carrots and just cut them into tiny pieces
1/4cupdiced pimentos or roasted red peppers
3large scallionsgreen and white parts chopped
3/4cupmayonnaiseI use Hellman's Olive Oil Mayo
1/4cupplain low fat greek yogurt
3tablespoonschampagne vinegar
1tablespoongranulated sugar
1/2teaspoonsalt
1/2teaspoonfresh ground pepper
Instructions
In a large bowl, add the macaroni, pickles, carrot, pimentos and scallions. Set aside
In a small bowl, whisk together the mayonnaise, yogurt, vinegar, salt and pepper. Pour the dressing over the salad ingredients and toss to combine. Taste to check for seasoning and add salt and pepper if needed.
Serve immediately or store in an airtight container in the refrigerator for 24 hours.
