Tuna pizza is the perfect twist for your weekend pizza night!
1ear of corn on the cobhusked and silk removed
2 5-ouncecans Bumble Bee Prime Filet Albacore Tuna with Jalapeños and Olive Oil
1/2cupcanned black beansdrained and rinsed
1/2cupdiced red bell pepper
1/4cupdiced red onion
1/2teaspoonancho chili powder
juice and zest of one lime
salt and pepper
4sandwich thinssplit in half
1 1/2cupsshredded sharp cheddar
Preheat oven to 425 degrees.
On a grill or over a gas flame, cook the corn until lightly charred. Set aside.
In a medium bowl, add the tuna with the oil and break up with a fork until finely shredded. Add the black beans, red bell pepper, onion, cilantro, chili powder, cumin, lime zest and juice. Cut the corn off the cob and add to the bowl. Toss the mixture to combine. Season with salt and pepper to taste.
Divide the tuna evenly between the 8 sandwich thin halves. Top each with cheese and place on a baking sheet. Bake the pizzas for 5 minutes or until the cheese is melted. Serve immediately.
