Ingredients
1 5-ouncecan Bumble Bee® Albacore Tuna in waterdrained
2tablespoonsfinely minced carrots
2tablespoonsfinely minced celery
1tablespoonsfinely minced red onion
2tablespoonsfinely minced parsley
2tablespoonsfresh lemon juice
2tablespoonsmayonnaise
1/8teaspoonkosher salt
1/8teaspoonfresh ground pepper
5small flour tortillas
shredded lettuce
diced fresh tomato
shredded cheddar
Instructions
In a small bowl, add the tuna and break it up using a fork until it's shredded. Stir in the carrots, celery, onion,, parsley, lemon juice, salt, pepper and mayonnaise until well blended. Set aside.
Using a biscuit cutter, cut out two rounds from each tortilla. Fill each tortilla with 2 tablespoons tuna salad and top with lettuce, tomato and cheese. (Or your favorite fillings.
Serve immediately.

This tuna salad is amazing all on it's own...serve it in a sandwich, stuff a tomato or top a green salad.
