Ingredients
1seedless watermelonapproximately 4-5 pounds
1 1/2cupswater
2 1/2tablespoonssugarI used caster, or extra-fine, sugar
3limesjuiced
Instructions
Cut the watermelon into large cubes and discard the rinds.
Place the watermelon in a blender and puree until smooth.
Pour the watermelon through a mesh strainer into a large bowl.
Add the water, sugar and lime juice to the watermelon juice and stir until the sugar is completely dissolved.
Chill until ready to serve.
Notes
This is best served immediately. You can chill the watermelon and water ahead of time to ensure it's cold once made. If you make it a few hours ahead you will see some separation. Just stir to combine before serving.
