4cupsruffled potato chips
3tablespoonsbutter
3tablespoonsflour
1cuphalf and half
1/2cupIrish ale
1cupshredded cheddar cheese
1cupshredded Monterey Jack Cheese
1/2cupchopped tomatoes
1/2cupchopped cooked bacon
1/2cupsliced green onions
2tablespoonschopped chives
3tablespoonssour cream
Instructions
Arrange the potato chips in a shallow baking dish or on a large tray. Set aside
Melt the butter in a saucepan over medium heat.
Whisk in the flour and cook for 1-2 minutes.
Stir in the have and half continuing to stir until smooth and starting to thicken.
Whisk in the ale and cook for 1 minute longer.
Remove from the heat and stir in the shredded cheese until smooth.
Pour the cheese sauce over the potato chips.
Sprinkle the tomatoes, bacon, green onions and chives over the nachos.
Top with sour cream and serve immediately.
Notes
If serving Irish Nachos at a party, pour the sauce over the chips and assemble right before serving. The chips will get soggy if you pour the sauce over them and let them sit for awhile.
