1pounduncooked elbow macaroni
1celery stalkchopped
1/2cupdiced sweet pickles
1/2cupdiced red bell pepper
1/2cupfrozen peasthawed
1/4cupchopped red onion
2 5ouncecans albacore tunadrained and flaked with a fork
3/4cupmayonnaiseI use Hellman's Olive Oil Mayo
1/4cupplain low fat greek yogurt
3tablespoonschampagne vinegar
1tablespoongranulated sugar
1/2teaspoonsalt
1/2teaspoonfresh ground pepper
Instructions
Cook the pasta according to package instructions. Drain and immediately rinse with cold water.
Transfer the pasta to a large bowl and add the celery, pickles, bell pepper, peas, onion and tuna.
In a medium bowl, whisk together the mayonnaise, yogurt, vinegar, sugar, salt and pepper.
Pour the dressing over the salad and stir to combine.
Cover and chill for 1 hour or overnight.
Stir the salad again right before serving.
Serve chilled.
Notes
Tuna Macaroni Salad can be made up to 3 days in advance. Store in an airtight container and refrigerate until ready to serve.
