1 1/2tablespoonsfresh lemon juice
1tablespoonfresh chopped thyme
1tablespoonchopped parsley
Instructions
Preheat grill to high heat.
Place the steaks on a platter and drizzle with olive oil on both sides.
Season with salt and pepper, liberally, on both sides.
Transfer the steaks to a hot grill and cook for 4-5 minutes on each side for medium-rare, I like to remove around 130˚F on an instant read thermometer.
Transfer the steaks to a platter and cover with foil. Allow to rest for 10 minutes.
While the steak is resting, make the garlic herb butter by melting the butter in a small saucepan over medium heat.
Turn the heat to low and stir in the garlic. Cook for 1-2 minutes.
Remove from the heat. Stir in the lemon juice and herbs.
Drizzle the butter over the steaks and serve immediately.
Notes
Before cooking, allow the steaks to come to room temperature for about 30 minutes. This helps the steak cook evenly while grilling.
