Fattoush Salad
Fresh and crisp, this easy Fattoush Salad is easy to make and topped with a zingy Pomegranate Molasses dressing!

head romaine lettuce
chopped into bite size pieces

grape tomatoes
cut in half

Persian cucumber
peeled, seeded and sliced

sliced radish

green onions

pita chips

chopped fresh parsley
stems removed

For the dressing:

extra virgin olive oil
Zest and juice of 2 limes

pomegranate molasses

tablespoon
honey

teaspoon
sumac

teaspoon
ground cinnamon

teaspoon
kosher salt
1/4
teaspoon
pepper
Instructions
In a large bowl, combine the lettuce, cucumber, tomatoes, radish and onions.
In a small bowl, whisk together the olive oil, lime juice, molasses, honey, sumac, cinnamon, salt and pepper.
Pour the dressing over the salad and top with pita chips.
Sprinkle with parsley, mint and more sumac, if desired.
Serve immediately.
Notes
Fattoush Salad is best served soon after making.
Leftover dressing can be stored in the refrigerator for up to 5 days.
