For the Balsamic Fig Marinade:
1/2cupolive oil
1/2cupbalsamic vinegar
1/4cupsoy sauce
1/4cupFig Jam
3tbspWorcestershire sauce
1lemonjuice and zest
2tablespoonsdried thyme
2tbspgarlic powder
1tbspDijon Mustard
2tbspkosher salt
1tbspblack pepper
For the London Broil:
12-poundbeef top round roastLondon Broil
Instructions
Whisk together the marinade ingredients and set aside.
Add the steak to a zip top bag and pour the marinade over the steak.
Marinade for 4 hours or overnight.
Preheat the grill to 450˚F for direct heat cooking.
Remove the steak from the marinade and place it on the grill.
Cook the steak for approximately 5-6 minutes on each side until the internal temperature on an instant read thermometer reaches 130-135˚F for medium rare.
Remove the steak from the grill and tent with foil.
Rest the steak for 10 minutes before slicing across the grain.
Serve immediately.
