2lbsboneless chicken thighs
2tablespoonscorn starch
1/2teaspoonkosher salt
1/2cupchicken stock
1/2cupsoy sauce
1/4cupapple cider vinegar
1/4cupbourbon
1/4cupbrown sugar
3tablespoonsolive oil
1tablespoonminced ginger
3garlic clovesminced
3-4green onions

Instructions
Cut the chicken thighs into bite sized pieces and transfer to a bowl.
Sprinkle the chicken with the cornstarch and salt. Toss to coat.
In a separate bowl, whisk together the chicken stock, soy sauce, vinegar, bourbon and brown sugar. Set aside.
Heat the oil in a large skillet over medium high heat.
Stir in the garlic and ginger, cook for 1 minute.
Add the chicken to the pan and cook for 5-8 minutes until golden brown and cooked through.
Stir in the sauce and bring to a boil.
Turn the heat to low and simmer for 5 minutes or until the sauce has thickened.
Serve the chicken over rice and sprinkle with green onions.
