3poundsYukon Gold potatoespeeled and cut into 1 inch pieces
1cupvegetable stock
1/2cupbuttercut into pieces
1/2cupsour cream
4ouncescream cheesecut into cubes
1teaspoongarlic powder
1teaspoononion powder
1/2teaspoonkosher salt
1/4teaspoonpepper
1/2cuphalf and half
Chopped chivesoptional
Instructions
Add the potatoes and stock to the slow cooker and sprinkle with the butter evenly.
Cover and cook on high for 3-4 hours or until the potatoes are fork tender.
Using a potato masher or hand mixer, mash the potatoes until almost smooth. (We like our’s a little chunky but you can make them smooth if you prefer. )
Stir in the sour cream, cream cheese, garlic powder, onion powder, salt, pepper and half and half.
Serve with chopped chives, bacon, cheese or other mix ins.
Notes
Slow Cooker Mashed Potatoes are great for making in advance and keeping warm in your slow cooker.Do not cut the potatoes in advance, be sure to cut them up right before adding to the slow cooker or they will oxidize and turn color.
