1tablespoonsbutter
4eggs
Salt and pepper
2slicescheddar or American cheese
2round Kaiser Rolls
Instructions
Score each slice of pork roll by making 4 small, 1 inch cuts around the edge of the slice.
Heat a skillet over medium high heat and add the pork roll to the pan. Cook the pork roll approximately 3 minutes until browned. Flip and cook on the opposite side.
Transfer the pork roll to a plate and keep warm.
Add 1 tablespoon butter to the pan and heat until melted.
Crack 4 eggs into the skillet and break the yolk but do not scramble. Season with salt and pepper. Cook the eggs until beginning to set, approximately 2-3 minutes. Turn the heat to low.
Flip the eggs, add 1 slice of cheese to two of the eggs and cook for an additional minute.
Place the bottom half of each roll on a plate.
Arrange two slices of the pork roll on the roll and top with the egg (egg without cheese, first and then the egg with the cheese on top.) Repeat with the remaining sandwich ingredients.
Place the top half of the roll on top and serve immediately.
Notes
Breakfast Sandwiches are best served soon after making.
