1poundpastacooked to al dente
1tablespoonolive oil
1/4cupdiced onion
1/4cuproasted garlic
1/2cupchicken stock or vegetable stock
5.3ouncepackage Boursin cheesecut into pieces
1 cuppeasthawed if frozen
Instructions
Cook the pasta according to package instructions to al dente.
In a large, deep skillet, heat the olive oil over medium high heat.
Add the onion and cook until softened. Stir in the garlic and cook for 1 minute.
Add the stock and bring to a boil. Stir in the cheese and cook until melted. Turn the heat to low.
Drain the pasta reserving 1 cup cooking liquid. Transfer the pasta to the skillet and toss to coat.
Cook the pasta for 2-3 minutes and stir in the peas.
Serve the pasta with parmesan cheese and chopped fresh parsley.
