Bacon-wrapped chicken breast is a flavorful and easy-to-make dish. Chicken breasts are seasoned and wrapped in bacon,then baked or grilled until cooked through and the bacon is crispy. The bacon adds a savory, smoky flavor and helps keep the chicken moist.
In a small bowl, whisk together the brown sugar, smoked paprika, chili powder, garlic powder, onion powder, thyme, cayenne (if using), salt and pepper.
Pat the chicken dry with a paper towel and rub half the spice mixture over the chicken breasts to coat.
Wrap each chicken breast in 2-3 slices of bacon to cover and place the chicken breasts, seam side down in a baking dish or oven proof skillet coated with cooking spray.
Sprinkle the remaining spice mixture over the chicken.
Transfer to the oven and bake for 25-30 minutes or until the bacon is crisp and the chicken is cooked through. (You can baste the chicken during the cooking process with the pan drippings.)
Turn the broiler on high for 1 minute if you prefer extra crispy bacon but be sure to keep an eye on it so it doesn’t burn.
Sprinkle with parsley and serve with some of the pan drippings, if desired.
Notes
Chicken can be prepped ahead and wrapped in bacon up to 24 hours in advance. Store in the refrigerator in an airtight container or covered with plastic wrap until ready to cook.
