2tablespoonsolive oil
10country style pork ribs
3tablespoonsBBQ Rubhomemade or your favorite store bought
1yellow bell pepperseeded and sliced
1orange bell pepperseeded and sliced
1onionpeeled and sliced
2 1/2cupsbarbecue saucehomemade or your favorite store bought
Instructions
Preheat oven to 300˚F.
In a shallow roasting pan, heat the oil over medium high heat.
Coat the ribs with the BBQ rub.
Arrange the ribs in the pan and cook for 5-6 minutes until browned.
Flip the ribs and continue to cook for an additional 5 minutes until browned on all sides.
Remove the ribs to a platter and set aside.
Drain all but 2 tablespoons fat from the pan and turn off the heat..
Return the ribs to the pan and cover with the barbecue sauce.
Top with the bell peppers and onion.
Cover the pan with a lid and transfer to the oven.
Bake for 2 hours or until the ribs are tender, juicy and easily pull apart with a fork.
Notes
BBQ Pork Ribs can be made up to 24 hours in advance. Cover and store in the refrigerator until ready to reheat.Heat in the oven until warmed through, approximately 20 minutes at 350˚F.
