Bruschetta chicken is a flavorful dish that combines the classic Italian appetizer with juicy chicken breasts. Pan Seared seasoned chicken breasts topped with a mixture of fresh tomatoes, basil, garlic,olive oil, and balsamic glaze.
In a medium bowl, add the tomatoes, onion, capers, garlic, parsley, basil, olive oil, salt and pepper. Stir to combine and set aside.
Pat the chicken dry with a paper towel and place on a flat cutting surface.
Cut the chicken breast in half lengthwise and set aside.
In a small bowl, whisk together the garlic powder, Italian seasoning, salt and pepper.
Sprinkle the seasoning evenly over both sides of each chicken breast.
Heat the oil in a large skillet over medium high heat.
Add the chicken to the skillet, working in batches, and cook the chicken until golden brown. Flip the chicken and cook on the opposite side for an additional 4-5 minutes or until almost cooked through. Repeat with the remaining chicken.
Arrange the chicken in the skillet and top each chicken breast with a slice of cheese. Cook the chicken until the cheese is melted.
Transfer the chicken to a platter and top with the bruschetta topping.
Sprinkle with parmesan cheese and fresh chopped basil.
Serve immediately.
Notes
Bruschetta topping is best if made right before serving but can be made in advance. The tomatoes will release their juice into the topping so be aware it may be more liquid-y the longer you wait.Leftover Bruschetta Topping is great on toast, in scrambled eggs or mixed into salad dressing.
