Ingredients

Instructions
Preheat the oven to 400°F.
Lightly spray a non-stick baking sheet with olive oil.
In a large bowl, combine the ground chicken, panko crumbs, egg, scallions, celery, carrot and garlic; season with salt and pepper, to taste.
Using clean hands, mix until combined. Roll the mixture into 1 tablespoon size meatballs.
Arrange meatballs onto a prepared baking sheet and bake until cooked through and golden, about 15 to 18 minutes.
Transfer the meatballs to a large bowl and add the buffalo sauce. Toss gently to combine.
Serve immediately, drizzled with blue cheese dressing and crumbled blue cheese, if desired.
