Caesar chicken kabobs are a delicious and easy-to-make grilled dish. Made with marinated chicken thighs or breasts in a creamy Caesar dressing, skewered with onion, zucchini and bell peppers.
3poundsboneless skinless chicken thighscut into larger bite size pieces
1 1/2cupscaesar salad dressingdivided
1red bell peppercut into 1 1/2 inch chunks
1red onioncut into 1 inch chunks
1zucchinicut into 1/2 inch slices
1/2cupgrated parmesan cheese
8wooden or metal skewersIf using wooden skewers, soak them in water for at least 30 minutes
Instructions
Add the chicken to a large bowl and pour 1 cup of the dressing over the chicken. Toss to coat. Cover and marinade for 30 minutes or overnight.
Thread the chicken, pepper, onion and zucchini on a skewer alternating until all the ingredients have been divided between the skewers.
Arrange the kabobs on a large baking sheet or tray and season with salt and pepper.
Preheat the grill to medium high heat and oil the grates.
Arrange the kabobs on the grill and grill for 4 minutes. Lightly brush the remaining dressing over the kabobs. Flip and continue grilling for an additional 4 minutes or until cooked through and golden brown.
Serve the kabobs sprinkled with parmesan cheese and drizzled with remaining caesar dressing.
Notes
Grilled Chicken Kabobs are great to prep in advance. Assemble the kabobs and arrange on a platter. Cover and chill until ready to grill. Remove from the refrigerator 20 minutes before grilling.
