Lucky Charms Bars are an easy no bake dessert made with Lucky Charms cereal, marshmallows, butter, and a few optional extras for a colorful, chewy treat that’s perfect for St. Patrick’s Day, bake sales, or after-school snacking. They come together fast, set up beautifully, and taste like a fun mashup of classic cereal treats and childhood nostalgia.
8cupsLucky Charms cerealplus extra for topping, optional
6cupsmini marshmallowsabout 10 oz or 1 (10 oz) bag marshmallows
6tablespoonsunsalted butter
1/2teaspoonkosher saltoptional but recommended
1teaspoonvanilla extractoptional
Optional Add-ins
1/2cupwhite chocolate chipsstir in off heat
2tablespoonsrainbow sprinkles
1/2cupextra Lucky Charms marshmallowsfrom the box for the top
Instructions
Line a 9x13-inch pan with parchment (leave overhang for lifting) or grease well.
Pour 8 cups Lucky Charms into a large bowl. If you want a pretty and festive top, set aside 1/2 cup marshmallows only.
In a large pot over low heat, melt the butter. Add marshmallows and stir constantly until smooth. Stir in salt and vanilla (if using).
Remove from heat. Add the cereal and fold quickly until evenly coated. (If using white chocolate chips, let the mixture cool 1 minute, then fold them in.)
Transfer to the pan. With lightly buttered hands or a greased spatula, gently press into an even layer, don’t push hard or the bars get tough.
Sprinkle reserved marshmallows on top and press very lightly to help them stick.
Let the bars set at room temperature 30-60 minutes, then lift out and cut into bars.
Notes
Use low heat when melting the marshmallows so the bars stay soft and chewy.Don’t compact the mixture too firmly in the pan or the bars can turn dense and tough.For clean slices, lightly butter the knife before cutting.These are best stored at room temperature, not in the fridge.Optional white chocolate chips, sprinkles, or extra cereal marshmallows on top make them feel a little more festive.
