Place the dates, almond butter, protein powder, water, vanilla and coffee extract into the bowl of a food processor. Process until a smooth paste forms.
Transfer the mixture to a bowl and divide into 20 equal pieces. Roll each piece into a ball and roll in the walnuts.
Place the balls on a baking sheet lined with parchment and transfer to the refrigerator for 30 minutes or until firm.
Notes
Energy bites can be stored in an airtight container in the freezer for up to 2 months (they won't last that long, they're so good!). No need to thaw before serving.
