1yellow bell pepperseeded and sliced
1orange bell pepperseeded and sliced

2 1/2cupsbarbecue saucehomemade or your favorite store bought
Instructions
Preheat oven to 300˚F.
In a shallow roasting pan, heat the oil over medium high heat.
Coat the ribs with the BBQ rub and arrange the ribs in the pan and cook over medium-high heat for 5-6 minutes until browned. Flip the ribs and continue to cook for an additional 5 minutes until browned on all sides.
Transfer the ribs to a platter and keep warm.
Drain all but 2 tablespoons fat from the pan and turn off the heat. Return the ribs to the pan and cover with the barbecue sauce. Top with the bell peppers and onion. Cover the pan with a lid and transfer to the oven.
Bake for 2 hours or until the ribs are tender, juicy and easily pull apart with a fork. Serve with the sauce and peppers.
