Peach Cobbler French Toast Bake: A delicious breakfast or brunch dish that combines the flavors of classic peach cobbler and French toast. Thick slices of bread are soaked in a sweet, creamy custard infused with cinnamon and vanilla, then layered with juicy peaches and topped with a buttery, crumbly streusel. Baked to golden perfection, this casserole is a warm, comforting treat that's perfect for sharing with family and friends.
Cut the brioche into 1 inch cubes and place in a large bowl.
In a medium bowl, whisk together the half and half, eggs, vanilla, cinnamon, and nutmeg.
Pour the peaches in the bowl with the brioche. Toss to combine.
Pour the egg mixture over the bread cubes and carefully toss the mixture to coat being careful not to break up the bread.
Transfer the mixture to a 13×9 inch baking dish coated with cooking spray.
In a small bowl, mix together flour, brown sugar, butter, and cinnamon with your fingers until a crumbly paste forms. Sprinkle the streusel evenly over the peaches.
Bake the casserole for 45-60 minutes or until puffed up and golden brown.
Serve the casserole dusted with powdered sugar, if desired.
