In a large bowl, whisk together the yogurt, almond milk, pumpkin and maple syrup.
Fold in the oats, chia seeds and pumpkin pie spice.
Cover and chill 8 hour or overnight.
Serve with a spoonful of greek yogurt and maple syrup, if desired.
Notes
Pumpkin Overnight Oats can be made up to 5 days in advance and stored in the refrigerator in an airtight container. Stir before serving because some separation can occur.
