Make short work of that leftover chicken with this easy Thai Chicken Salad and spicy peanut dressing!

For the dressing:
1/2cupcreamy natural peanut butter
1/4cuplow-sodium chicken broth
juice and zest of one lime
1tablespoonred curry paste or curry powder
For the salad:
1romaine hearttorn into bite-sized pieces
1cupchopped cooked chicken breast
1/4cupchopped fresh cilantro
1/4cupchopped roasted peanuts
1/4cupcanned rice noodles
2scallionsgreen and white parts sliced
1/2cupshredded purple cabbage
In the bowl of a food processor, blend together all the ingredients (peanut butter through vinegar) until smooth. Transfer to a bowl and set aside.
In a large bowl, toss together the romaine, chicken, cilantro, scallions, radish, cucumber, carrots and cabbage. Pour the dressing over the salad and toss to combine. Sprinkle the peanuts and rice noodles over the salad and serve immediately.
Note: The dressing can also be served on the side and added as desired.
