Ingredients
3poundsbaby Yukon Gold potatoeswashed and sliced in half
1large onioncut into chunks
3/4cupdiced bell pepper
1 1/2tablespoonsO Organics ground cumin
1 1/2teaspoonsground O Organics Cayenne pepper
1teaspoongarlic powder
1/2teaspoonkosher salt
1/2teaspoonfresh ground pepper
2tablespoonsolive oil
4ouncesO Organics Herbed Goat Cheeseroom temperature
3/4cupO Organics Tomato Sauce
1/4cupO Organics Low-Fat Milk
1/4cupfresh chopped parsley
Instructions
Preheat oven to 475 degrees.
In a large bowl, toss the potatoes, onion, bell pepper, cumin, cayenne, garlic powder, salt, pepper and 1 tablespoon olive oil to combine thoroughly. Set aside.
Heat the remaining olive oil in a large skillet over high heat. Add the potato mixture to the pan and cook for 4-5 minutes until they begin to brown. Stir with a spoon and allow the potatoes to begin to brown on all sides, approximately 4-5 additional minutes.
Transfer the skillet to the oven and roast for 10-15 minutes or until fork tender.
While the potatoes are in the oven, whisk together the goat cheese, tomato sauce and milk until smooth. Season with salt and pepper, to taste.
Drizzle the remoulade over the potatoes and sprinkle with parsley, if desired.
