Ingredients
1poundOrzo Pasta
1 15ouncecan Chickpeasrinsed and drained well
1English CucumberChopped
2cupsgrape tomatoessliced in half
1/2cupdiced red onion
1/2cupsliced manzanilla olives
1/2cupsliced black olives
1/4cupchopped fresh parsley
1/4cupchopped fresh mintoptional
1cupGreek Salad Dressing
Instructions
Cook the pasta according to package directions. Drain and cool to room temperature.
Transfer the pasta to a large mixing bowl and add the chickpeas, cucumber, tomatoes, red onion, manzanilla olive, black olive, parsley and mint, if using. Toss to combine.
Pour the dressing over the salad and stir to coat.
Cover and chill for 30 minutes before serving.
Right before serving, stir the salad to redistribute any dressing that may have settled at the bottom of the bowl.
Notes
Orzo Salad can be made up to two days in advance and stored in the refrigerator until ready to serve.Leftover Orzo Salad will last in the refrigerator up to 5 days.
