1cupMiddle Sister Mischief Maker Cabernet
1/4cupgranulated sugar
4ouncesgoat cheese
3/4cupheavy cream
1tablespoonhoney
Instructions
In a medium bowl, carefully mix together the berries, wine and sugar. Allow the mixture to sit at room temperature for 1 hour. Cover and transfer to the refrigerator for an additional hour.
In a medium bowl, blend the goat cheese, cream and honey with a hand mixer until light and fluffy. Cover and refrigerate until ready to use.
In 2 wine or parfait glasses, place 1/4 of the berries in the bottom of each glass. Top with 1/4 of the goat cheese mixture and then another 1/4 of the berries. Finish off with the remaining goat cheese and top with fresh mint. Serve immediately.
