Salsa Verde Recipe

Ingredients

fresh tomatillos
husks removed and cut into quarters

jalapeno peppers
stems and seeds removed

garlic cloves
peeled

fresh cilantro

diced onion

juiced and zested

ground cumin

kosher salt

of cayenne

Instructions
Preheat the oven to 400˚F.
Arrange the tomatillos on a baking sheet in a single layer and drizzle with olive oil.
Roast the tomatillos for 20 minutes or until tender.
Remove from the oven and allow to cool slightly.
Place all the ingredients in a blender and puree until smooth, approximately 1-2 minutes.
Season with additional salt and pepper, if needed.
Stir to combine.
Serve immediately in a bowl topped with fresh cilantro and crumbled cojita cheese, if desired.
