Ingredients
2tablespoonsolive oil
1 1/2poundsLarge Shrimp16-20 count, peeled and deveined
1teaspoongarlic powder
1/2teaspoonkosher salt
1/2teaspoonfresh ground pepper
8ouncesfettuccine pasta
8tablespoonssalted butter
1cupheavy cream
1cuphalf and half
Juice and zest of 1 lemon
2cupsfreshly grated parmesan cheese
1/8teaspoonnutmeg
Kosher salt and fresh ground pepperto taste
Fresh chopped parsley and basilif desired
Instructions
Heat the olive oil in a large skillet over medium high heat.
In a small bowl, whisk together the garlic powder, salt and pepper.
Sprinkle the seasoning mixture evenly over the shrimp and toss to coat.
Add the shrimp to the pan and cook over medium heat until bright pink, approximately 2-3 minutes.
Flip the shrimp and continue cooking until no longer translucent (the shrimp will form the letter C when just about done cooking), approximately 1-2 minutes.
Transfer the shrimp to a platter and keep warm.
Bring a large pot of salted water to a boil over medium heat.
Add the pasta to the water and cook according to the package directions for al dente.
While the pasta is cooking, make the sauce.
Wipe the skillet clean with a paper towel and melt the butter in the pan over medium heat.
Whisk in the cream and half and half.
Heat the cream to just a simmer and turn off the heat.
Whisk in the lemon juice and zest.
Add 1 1/2 cups of cheese stirring until smooth.
Stir in the nutmeg.
Add the pasta to the sauce with the remaining cheese tossing to coat until the sauce begins to thicken.
Fold in the shrimp and garnish with the fresh parsley, basil and more cheese, if desired.
Serve immediately.
Notes
Shrimp Alfredo is best if served soon after making.You can make the Alfredo sauce separately and store in an airtight container until ready to make dinner. Heat in a saucepan or skillet over low heat until warmed through and toss with cooked pasta and shrimp.
