Instructions
Pour the diced tomatoes and green chiles into a fine-mesh strainer. Drain thoroughly.
Add the softened cream cheese, sour cream, ranch seasoning, and taco seasoning to a medium mixing bowl. Beat with a hand mixer until smooth.
Fold in the drained tomatoes, cheddar cheese, lime zest, lime juice, and black beans, if using.
Cover and refrigerate for at least [confirmed chill time], or until cold, thick, and scoopable.
Garnish with chopped cilantro or sliced green onions. Serve cold with tortilla chips, vegetables, or crackers.
Notes
Drain the tomatoes and green chiles thoroughly to prevent a watery dip.
Let the cream cheese soften before mixing for the smoothest texture.
Ranch and taco seasoning blends vary in saltiness, so taste before adding extra salt. Prepare the dip ahead of time and store it covered in the refrigerator for up to 3 days. Stir the dip before serving again if a small amount of liquid separates.
Freezing is not recommended because the dairy base may separate after thawing.
If the dip is very firm after chilling, let it sit at room temperature for a few minutes before serving. Keep the dip chilled when serving it outdoors.
