A spooky treat for Halloween, these easy to make deviled eggs are filled with an avocado based filling!

Ingredients
  • 4 large hard boiled eggs peeled and halved
  • 1 avocado pitted and removed from skin
  • 1 teaspoon horseradish dijon mustard I used Maille
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 large black olives
  • 3 peppedew peppers cut into thin strips
Instructions
  1. Remove the yolks from the whites and place the yolks in a medium bowl. Carefully clean the whites and set aside.
  2. Add the avocado, mustard, lemon juice, salt and pepper to the yolks and whisk until smooth. Transfer the mixture to a zip top bag and snip off the end. Fill the egg whites with the avocado mixture and set aside.
  3. Cut the olives in half and stuff the end with the large hole with a strip of pepper. Place one olive half on top of the avocado mixture of each egg and then place a few strips of pepper on the white part of the egg to make bloodshot eyes.
  4. Cover and refrigerate up to 4 hours.
