  • 1 pound ground turkey
  • 1 cup chopped fresh baby spinach
  • 1/2 cup crumbled feta cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chopped oregano
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 1 cup plain low-fat greek yogurt
  • 2 garlic cloves
  • 1/2 cup chopped sun-dried tomatoes rehydrated in hot water and drained
  • 2 teaspoons lemon zest
  • 1 teaspoon lemon juice
  • 1 teaspoon fresh oregano
  • kosher salt and fresh ground pepper to taste
  • 4 whole wheat hamburger rolls
  1. Preheat grill.
  2. In a large bowl, mix together the turkey, spinach, feta, garlic powder, oregano, salt and pepper using your hands until well blended. Form the turkey mixture into four equal size patties. Transfer to the patties to a plate and refrigerate for 15-20 minutes (or up to 8 hours).
  3. In a food processor or blender, add the yogurt, garlic, tomatoes, lemon zest, juice and oregano. Blend until smooth. Season with salt and pepper to taste. Transfer to an airtight container and chill until ready to use. (Can be made up to 48 hours in advance.)
  4. Remove the burgers from the refrigerator 15 minutes before grilling. Place the patties on the grill and cook for 4-5 minutes or until they release easily from the grill rack. Turn the patties over and cook for an additional 3-4 minutes or until the burgers are done. Transfer to a platter, cover with foil and allow to rest 5-10 minutes.
  5. Place the 1 burger on the bottom of each roll. Top with 1 tablespoon tzatziki sauce. Place the top of the roll on each of the burgers and serve immediately.
