  • 2 sheets puff pastry thawed according to package instructions
  • 4 tablespoons tomato jam
  • 1 cup shredded sharp cheddar
  1. Preheat oven to 450 degrees.
  2. On lightly floured surface, roll out one sheet of puff pastry until 1/4 inch thickness and spread 2 tablespoons evenly over the surface. Sprinkle with 1/2 cup of cheese. Fold the sides of the dough towards the center so they meet halfway in the middle. Fold the sides again so the two folds meet in the center and then fold 1 half over the other so it sits on top. You will have 6 layers. Wrap tightly in plastic wrap and repeat with remaining pastry.
  3. Chill in the refrigerator for 1 hour or up to 24 hours.
  4. Slice the dough into 3/8-inch slices and place the slices, cut side up on a baking sheet lined with parchment paper.
  5. Bake the palmers for 6 minutes. Turn each over with a spatula and bake another 3-4 minutes or until golden brown and puffed up. Remove from the oven and cool for 2 minutes and then transfer to a wire rack to cool completely.
