In a large bowl, add the chicken, lettuce, tomatoes, cheese, crouton, dressing, pepper and salt.
Toss to combine.
Using tongs, add 1 cup of the salad mixture to the center of a tortilla.
Wrap the tortilla up burrito style by folding up the bottom edge over the filling then folding both sides into the center. Continue rolling up to contain the salad in the tortilla.
Place the seam side down and cut in half.
Serve immediately.
Notes
To make in advance, toss the salad ingredients, minus the croutons, and chill for 1 hour. Assemble the sandwiches right before serving.
