1/4cupdry sherry
zest and juice of one lemon

3/4cupfreshly grated Parmesan
3cupsfrozen broccoli floretsthawed and well drained
3cupscooked diced chicken breast
1cupcooked white rice
1cuppanko bread crumbs
1tablespoonbuttermelted, for the breadcrumb topping
Instructions
Preheat the oven to 350 degrees.
Melt the 4 tablespoons butter in a medium saucepan over medium heat. Stir in the flour and cook until the mixture becomes deep golden brown.
Slowly whisk in the chicken broth cooking until the mixture begins to thicken. Whisk in the half and half, sherry, lemon zest and juice. Remove from the heat. Stir in the salt and pepper until smooth.
Place broccoli in an ungreased 13-in. x 9-in. baking dish. Cover with the rice and then half of the sauce. Top with chicken. Stir the Parmesan cheese into remaining sauce until smooth. Pour the sauce mixture over the chicken.
Toss the panko breadcrumbs with the 1 tablespoon melted butter and sprinkle evenly over the casserole. Bake, uncovered, at 350° for 40 minutes or until golden brown and bubbling.
Serve immediately
Notes
Rotisserie chicken or leftover cooked chicken both work well.
If using frozen broccoli, thaw and drain it thoroughly before assembling the casserole.
Make the casserole ahead and refrigerate until ready to bake. Add the panko topping just before baking.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheat individual servings in the microwave or warm covered in a 350°F oven until heated through.
Freeze the casserole without the breadcrumb topping for up to 3 months. Thaw overnight in the refrigerator and add fresh panko before baking.
