Slice the chicken breasts in half horizontally to create thin cutlets. Pound lightly to an even 1/4-inch thickness, if needed. Season both sides with the salt and pepper.
Place the flour in a shallow dish. Lightly coat each chicken cutlet in flour, shaking off the excess.
Heat the olive oil and 2 tablespoons of the butter in a large skillet over medium-high heat. Add the chicken in a single layer, working in batches as needed to avoid overcrowding the pan.
