Crispy baked truffle fries with fluffy centers, melted truffle butter, freshly grated Parmesan, and parsley. This easy restaurant-style side dish is perfect with burgers, steak, seafood, or sandwiches.
Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
Cut the potatoes into evenly sized fries approximately ¼ inch thick.
Place the potatoes in a large bowl and cover them with cold water. Soak for 1 hour.
Drain the potatoes and pat them completely dry with clean kitchen towels or paper towels.
Return the potatoes to the dry bowl. Add the olive oil and toss until evenly coated.
Arrange the potatoes in a single layer on the prepared baking sheet. Leave space between the fries and do not allow them to overlap.
Bake for 15 minutes. Flip the fries and continue baking for another 15–20 minutes, or until golden brown, crisp at the edges, and tender inside.
While the fries finish baking, melt the truffle butter in the microwave for approximately 30 seconds.
Transfer the hot fries to a large bowl. Add the melted truffle butter, Parmesan, parsley, and the confirmed amount of kosher salt. Toss gently and serve immediately.
Notes
Cut the fries to an even thickness so they bake at the same rate.
Pat the potatoes completely dry after soaking.
Do not overcrowd the baking sheet. Use two pans if necessary.
Add the truffle butter and Parmesan after baking.
The potatoes may be cut and soaked in the refrigerator for up to 24 hours.
Bake the fries immediately before serving for the crispest texture.
Truffle oil may be substituted for the truffle butter, but add it gradually because its strength varies by brand.
Store leftovers in the refrigerator for up to 3 days.
Reheat in the oven or air fryer rather than the microwave.
Cooked fries dressed with truffle butter and Parmesan are not recommended for freezing.
