In a small sauté pan coated with cooking spray, heat one flour tortilla and top 1/2 of it with 2 ounces brie. Top the brie with 1/4 of the apple, 1/8 cup granola and drizzle with caramel sauce. Fold the other half of the tortilla over the quesadilla to form a "sandwich" and transfer to a platter with a spatula. Cut the quesadilla in half. Repeat with the remaining ingredients until all the tortillas have been used.
