Sweet, savory and so amazingly good, this Crunchy Caramel Apple and Brie Quesadilla is great for breakfast or dessert.  The granola is a fantastic addition to an already tasty treat.  Easy to make in minutes, you’ll be noshing on these all season long.

I don’t know why this happens but as soon as Labor Day is behind me I don’t scramble for the pumpkin spice everything, I’m a caramel girl.  Salted caramel, caramel caramel, chocolate caramel, homemade caramel….it’s all me.  I can eat that stuff with a spoon and call it dinner.  It’s so, so good I try my best to incorporate it into every single meal of the day.  So, when I saw that Bear Naked had a new flavor granola out, Sea Salted Caramel Apple….I was all about digging into trough of it.

I tossed Landon into the car and ventured to my nearest BJ’s where I picked up a box of it…and a bazillion other things….and headed home to bust into my new favorite food ever.  I was able to get a 3 pack of Bear Naked granola in one box for a great deal. As soon as I opened the bag…the smell of sweet caramel and cinnamon came wafting out.  And so began the shoveling of the granola into my mouth as fast as I could.  Since that glorious day, I’ve been eating it with absolutely everything…yogurt…ice cream…fruit…ice cream. It’s simply incredible.

Then I came home with a hunk of brie and some apples….and noticed we had leftover tortillas from dinner the night before.  Yeah, it doesn’t take a genius to figure out what happened next….tortilla, brie, thinly sliced apples, sprinkle of Bear Naked Sea Salted Caramel Apple Granola heaven, drizzle of homemade caramel sauce, fold…………stuff your face.  I call this creation the most glorious breakfast in the world….you can call it whatever you’d like but it’s simply amazing.  And you should make it soon.  Pair it with a Bloody Margarita for a morning toast to fall.

Ingredients
  

  • 4 small flour tortillas
  • 8 ounces soft mild brie
  • 1 Gala apple cored and thinly sliced
  • 1/2 cup Bear Naked Sea Salted Caramel Apple Granola
  • 1/4 cup caramel sauce

Instructions
 

  • In a small sauté pan coated with cooking spray, heat one flour tortilla and top 1/2 of it with 2 ounces brie. Top the brie with 1/4 of the apple, 1/8 cup granola and drizzle with caramel sauce. Fold the other half of the tortilla over the quesadilla to form a "sandwich" and transfer to a platter with a spatula. Cut the quesadilla in half. Repeat with the remaining ingredients until all the tortillas have been used.
  • Serve immediately.
