Grilled pork tenderloin is elevated with a sweet and tangy blueberry sauce. The tenderloin is marinated or seasoned before being grilled to perfection, while the sauce is made by reducing balsamic vinegar with blueberries,creating a rich and flavorful glaze.
In a small bowl, whisk together the brown sugar, garlic powder, paprika, cumin, salt and olive oil.
Spread the rub over the surface of the pork tenderloin to coat. Allow to sit for 30 minutes or overnight.
Preheat the grill to medium high heat.
Place the pork on the grill and cook for 5-8 minutes. Turn the pork tenderloin over and grill for an additional 10 minutes or until an instant read thermometer registers 145˚F.
Transfer the pork to a platter, cover with foil and rest for 10 minutes.
In a small saucepan, whisk together the jam, pineapple juice, vinegar, soy sauce, garlic, olive oil and seasoning over medium heat. Bring the mixture to a boil and then simmer until slightly thickened.
