Pimento Cheese Sandwich Recipe
A southern classic, this easy Pimento Cheese Sandwich is served up at events like the Masters or the Kentucky Derby but you can make it at home in minutes for anything from a casual lunch to a swanky Sunday brunch.

Ingredients
For the Pimento Cheese:

cream cheese
room temperature

shredded sharp cheddar cheese

cup
shredded Colby Jack cheese
1/2
cup
mayonnaise

teaspoon
cayenne pepper

teaspoon
garlic powder
1/2
teaspoon
kosher salt
1/2
teaspoon
fresh ground pepper

tablespoons
chopped pimentos
For the sandwich:

white bread
Olives and cornichons for garnish
optional.
Instructions
To make the cheese spread:
In a medium bowl, whip the cream cheese using a hand mixer until light and fluffy.
Add the cheddar, Colby Jack, mayonnaise, cayennes, garlic powder, salt and pepper. Continue mixing on medium speed until well blended.
Add the pimentos and mix to combine.
To make the sandwich:
Arrange four slices of bread on a flat work surface.
Spread the cheese spare over the bread and top with the remaining bread slices.
Cut in half and serve with olives and pickles.
Notes
Leftover pimento cheese can be stored in the refrigerator and served as a dip with chips, crackers and veggies.
