This simple spread maximizes the sweetness of caramelized onions with a hint of orange flavor. Sweet Onion Marmalade is easy to make and perfect to have on hand for last minute parties, whether it’s a party of 1 or 10.
I like to get my friends together to gab. That’s right…gab…just talk all night long about anything, kids, clothes, spray tans, Thor. Anything and everything is game when we hang out. Sometimes it’s just two of us…sometimes it’s more. But anytime we get together there’s sure to be at least one person who follows a gluten-free diet. I’m not that person but I like to make my guests feel welcome in my home and that includes serving at least a few things they can eat without ballooning up like a blowfish (or whatever their reaction may be to the gluten.) I used to just set up a cheese platter with some fruit and skip the crackers all together until I discovered that Breton has a line of Gluten Free Crackers!
I’ve been a lover of Breton crackers for years to this was an absolute no-brainer. I knew they would be a great addiction to the girl gab sessions this summer and was so thrilled to break them out for my first gluten-free guest of the summer. The crackers come in four fabulous flavors.
Herb & Garlic – Tons of garlic flavor packed into these crisp crackers, perfect on their own or with a light cream cheese spread. Just a suggestion.
The Original gluten-free with flax – Made with arrowroot flour and green lentil flour, you would never know these are gluten-free.
Black Bean with Onion & Garlic and White Bean with Salt & Pepper – Beans are the #1 ingredient, each serving contains 2 grams each of fiber and protein. They’re low in saturated fat, contain no artificial colors or flavors, no cholesterol and are trans-fat free. Guilt-free gluten-free!
I’ve been wanting to share my Sweet Onion Marmalade with you all for a very long time so this was the perfect opportunity. It’s the perfect topping for Breton’s White Bean with Salt & Pepper crackers and I even added a little blue cheese to set the whole thing over the top. Don’t like blue cheese? You can just skip it. The Sweet Onion Marmalade is perfect on it’s own and it’s also gluten-free!
It does take some time to caramelize the onions but it’s mostly hands off time and believe me when I say…you will be rewarded. What you end up with is soft, sweet onions that kind of melted in the pan. A little hit of orange juice and zest puts this spread on the top of my favorites list. Simple and incredibly flavorful. You can make it in advance and store it in an airtight container just in case you have an unplanned gab fest. Or if you just want a little gluten-free snack after work with a glass of wine. Sweet Onion Marmalade on Breton Gluten Free Crackers topped with blue cheese and Walnuts would also be great as a brunch offering along side a Bloody Margarita. You know you agree. 🙂

Sweet Onion Marmalade
- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 large vidalia onions, sliced thin
- 1/3 cup water
- 1 tablespoon sugar
- 2 tablespoons orange juice
- 1/2 teaspoon orange zest
- 1 teaspoon balsamic vinegar
- kosher salt and pepper to taste
- In a medium skillet, heat the olive oil and butter until the butter is melted. Add the onions to the pan and cover. Cook the onions until softened and they begin to caramelize stirring occasionally. Add 1/2 the water to the pan, cover and continue to cook until the water has evaporated. Add the remaining water, sugar, orange juice, zest and vinegar. Cover and continue to cook until the onions are a deep brown color. The whole process will take between 30-40 minutes. Season with salt and pepper to taste.
- Allow the marmalade to come to room temperature and store in an airtight container.
