Ooey, gooey, crispy quesadillas filled with chocolate, marshmallows and graham crackers. The perfect twist on an old favorite summertime snack!

When I think of summer, naturally, I think of s’mores! It’s just one of those things I don’t feel right eating in the dead of winter. I love them! And I love their versatility….you can use whatever you want, it’s the “no rules” dessert. And you don’t have to worry about a cake flopping in the oven or a gelatin recipe not setting.
So I put a twist on my usual, classic s’mores and turned them into quesadillas! Ha! In love! Crispy corn tortillas, dripping with gooey marshmallow and melty chocolate. These are made for sharing. Well, maybe not…but they’re so easy to make you don’t really have to share.
These are great for camping too….especially, if you’re like me, and have a little trouble skewering your marshmallow with a stick you just happened to find laying on the ground in the middle of the woods. And then eating said marshmallow not knowing what that stick has been through…other than the mud. Ya know what I mean?
Anyway….just make these quesadillas and enter to win some great prizes!
Get the Recipe: Campfire Quesadillas
Ingredients
- 8 corn tortillas
- 8 ounces semi-sweet chocolate chips
- 2 cups mini marshmallows
- 8 tablespoons graham cracker crumbs
Instructions
- Lay the corn tortillas on a grill grate over a medium flame. Immediately top four of the tortillas with the chocolate chips, marshmallows and graham cracker crumbs. Allow the marshmallows to begin to puff up and then top with the remaining tortillas. Allow to cook for an additional minute and then transfer to a plate or serving platter.
- Let the quesadillas rest for 1-2 minutes and then cut with a pizza cutter into four triangles. Serve immediately.
