Most of you, my favorite internet friends, are out of high school….and even college. I know how old most of you are. 🙂 Does that make me a stalker? It’s a little weird to know that websites I visit collect that kind of information. But it’s helpful when coming up with ideas, recipes and stories that I think you’ll like. Like this one….for those of you who are out of high school….do you ever feel like you never left? In many ways, I feel like I haven’t really grown up…I still think I’m like a 20-something’s peer….I’m totally not. I know they look at me like I’m their mom but I still think I’m waaaay cool. And hip….and I’m using words that a mom would use. Sometimes I make poor choices like a 20-something….and sometimes I see others making poor choices like a 20-something. SMH. (I just learned what SMH means so I can now use it and be, like, so cool.)
I follow a lot of bigger, more influential, bloggers on Instagram. I LOVE Instagram….because I’m hip and cool. 🙂 I love looking at other people’s photos, snippets of their lives…it’s quick and fun and sometimes inspiring. Sometimes people, grown adults, can be a little mean. They make poor choices and once it’s out there…it’s out there for good. Something I try to remind my daughter…and her friends. Even though you delete something, it’s still out there in the vast internet world….FOR.EVER. A blogger recently posted something about a stranger on Instagram. It was a fashion critique of a stranger. The blogger has a huge following and I, honestly, couldn’t believe some of the comments. My mom hat came out. I refrained from commenting even though I wanted to defend the unknowing person from the masses. What if that was me? Or my daughter? Or an “in real life” friend? How would they or I feel? And then I stumbled on this article this morning from BuzzFeed, Everyone On The Internet Is An Actual Person. Just a little reminder to be kind. That’s all.
Back to the salad, it reminds me of high school. Broccoli Salad is one of my favorites because it was always at every picnic or barbecue I ever went to when I was growing up. It was a constant, a staple….and so, so tasty! It’s one of those salads that you rarely make at home just because. Just to have around, it’s like coleslaw. Do you really whip up coleslaw just to have in the fridge to snack on? I do, however, like to whip up this Blueberry Feta and Quinoa Salad to snack on….just putting that out there for ya.
One day I had a craving for broccoli salad…..but I had feta, not cheddar. And dried cherries…not raisins. Well, I had raisins but the dried cherries seemed like a better friend for the feta. And just to get crazy, I threw in some sunflower seeds. AND I chopped up the broccoli into teeny, tiny bits….a little smaller than bite size so that the dressing could get into all the little crevices and become super tasty. All the ingredients became friends in this salad, even though they are a little unconventional for Broccoli Salad. It’s a happy, happy salad that will remind you that just because we’re different….we can all get along and be friends.
Chopped Broccoli Salad with Cherries and Feta
- 1/2 cup mayonnaise
- 1/4 cup apple cider vinegar
- 1/4 cup honey
- kosher salt and fresh black pepper
- 4 cups fresh broccoli florets, cut into small pieces
- 1/2 cup small diced red onion
- 1 cup dried cherries
- 4 ounces feta, small diced
- 3/4 cup salted sunflower seeds, shelled
- In a small bowl, whisk together the mayonnaise, vinegar and honey. Add the salt and pepper to taste. Set aside.
- In a large bowl, toss together the broccoli, red onion, cherries, feta and sunflower seeds. Add the dressing and stir to combine thoroughly. Cover and refrigerate for 30 minutes to allow the flavors to blend. Serve immediately or store in the refrigerator for up to 24 hours in an airtight container.
