Cranberry Pomegranate Bellini
A festive and easy cocktail that will make a beautiful addition to your holiday brunch this Christmas. Fruity and light, it’s amazing served with a slice of bacon….or five.
This is the time of year everyone breaks out the bubbly. Me…..I can find a reason to pop the cork anytime of year. Toddler finally potty trained….POP! Teenage daughter left for the weekend….POP! Husband bought a dozen Krispy Kreme donuts….POP…POP!!!! BUT this time of year, I like to add a few things to my bubbles to make them extra sparkly and Christmasy. Yep, let’s celebrate the holiday season with a festive drink. One that you can make after you’ve opened waaaaay too many Champagne and Prosecco bottles. One that requires very little math and a slightly steady hand so you don’t have juice and booze all over the kitchen floor.
I have the cocktail for you….Cranberry Pomegranate Bellinis. And I’m going to share with you how to be all fancy with it….don’t worry, you can still tie one on and pull it together like a Martha-esque Rock Star. I thought about busting out the juicer for this but let’s be real. Not everyone has a juicer. And fresh juice would be totally amaze-balls but again….realness prevailed.
You need three ingredients….Pomegranante juice, Cranberry Juice and Prosecco. (Prosecco is a sparkling white wine from the Veneto region of NE Italy and goes really well with bacon. 🙂 ) That’s all. See how easy that is? And your garnish? You can use my Vanilla Sugared Cranberries and look like you are the queen of domesticness OR you can freeze some pom seeds and cranberries. I vote for a blend of both but I’m not going to twist your arm. You do what you need to do to survive the holidays with your sanity in check. K? But the Vanilla Sugared Cranberries are gorgeous and easy….just sayin’.
Pour half a shot glass of Pom juice and half a shot of Cran juice in a champagne glass and then slowly fill with Prosecco….slowly so you don’t foam all over the place. Drop in a few seeds and berries, top with some orange zest if you’re feeling especially fancy pants and serve. Or take a swig. It’s up to you. It’s your drink. Cheers!

Ingredients
- 8 ounces cranberry juice
- 8 ounces pomegranate juice
- 1 bottle Prosecco Sparkling Wine
- Frozen Pomegranate Seeds, for garnish
- Frozen Cranberries, for garnish
Instructions
- Pour half a shot each of cranberry juice and pomegranate juice into a champagne flute and slowly fill with prosecco. Garnish with cranberries and pomegranate seeds, serve immediately.
