The weather hit 70 degrees the other day and all I wanted to do was sit on the beach. I was peeling off layers of clothing as the morning wore on because I forget how to dress for warmer weather. It’s so amazing to me how 70 degrees in early April feels like a sweltering, sweaty day. BUT 70 degrees in August feels like an impending blizzard. I wanted to break out my shorts and show off my pasty legs in all their rippled glory. But I didn’t. Because that’s not a good look. So, instead….I went inside and made a smoothie. Right after I finished off the rest of the Duck Confit Sweet Potato Fries. It’s about balance, friends.

My Pina Colada Chia Seed Smoothie was the perfect way to, at least, escape to the tropics for a bit. It’s creamy and smooth, thick and fruity. Just like a REAL Pina Colada…minus the rum. You can certainly ADD rum if you’re feeling a little rebellious but I was trying to keep things healthy here. I did add chia seeds because chia seeds are (I found) the best natural hunger suppressant around. One ounce of chia seeds contains 11 grams of fiber and 4 grams of protein. Not too shabby.

To keep things light and not watered down…I froze one banana the night before. I chose one that was on the verge of being too ripe so it would act as a natural sweetener. Then I added fresh pineapple, light coconut milk, plain greek yogurt, a smidgen of honey and, of course, chia seeds. Just about a minute in the blender was plenty of time to whip this tropical dream into shape, pour into a glass and enjoy. Vacation in a glass. Now all I need is a tan. 🙂

Ingredients 

  • 1 very ripe banana, frozen
  • 1 1/2 cups fresh pineapple chunks
  • 1 cup light coconut milk
  • 1/2 cup plain low fat greek yogurt
  • 1 teaspoon chia seeds
  • 1 teaspoon honey, optional, if you like things sweeter
Prevent your screen from going dark

Instructions 

  • Add all ingredients to a blender and blend until smooth. Pour into two glasses and serve immediately.
