Hot Fudge Brownie Sundae Bites
Creamy vanilla ice cream tops a fudge brownie base then is topped with warm hot fudge sauce, whipped cream and a cherry creating a fun mini dessert. Easy to make, Hot Fudge Brownie Sundae Bites are perfect for a crowd and are little bits of heaven.
I have a confession. I did something that I never, ever, ever do and it ended up consuming my entire day. The WHOLE day…like from 11:00 AM until 10:00 PM. It was a complete accident and now…it’s a bit of an addiction. I binge watched The Real Housewives of New York for my entire Tuesday. 🙁 I did about an hour’s work the whole day and then, I swedish meatballs while I continued watching the train wreck from my kitchen. Then I sat at the dinner table with my son while eating previously mentioned swedish meatballs and continued to watch like it was the best daytime drama ever.
I haven’t watched RHONY for years…since Bethenny left to start her own show and I didn’t miss it at all. I went on with my life without wondering what they were all up to and started this blog. Then, Tuesday was a wash out with thunderstorms rolling through every few minutes and I turned on the TV for a little background noise. As soon as I hit the power button, I was hooked. Two women were barking at each other about the gossip hounds in the background and I had to see what the fuss was about. And I was super curious as to how it would end. Would one of them grab the vase on the sofa table and clock the other in the head? Was that glass of wine going to be the star of the finale with a big splash to the cleavage? I had to know. I had to watch. I had to waste an entire day watching what should be called “Grown Women Behaving Badly.” It was surprisingly relaxing…yet appalling at the same time.
Watching RHONY can make you really hungry. It was just a stroke of luck that I made these Hot Fudge Brownie Sundae Bites the day before because I could keep popping them in my mouth for the duration of the marathon. They’re so creamy and insanely good that I may have eaten somewhere in the vicinity of 8-12. Possibly. Essentially, they’re mini fudge brownies topped with vanilla ice cream and then drenched in a warm hot fudge sauce. Topped with some whipped cream, sprinkles and a cherry…they’re a true party in your mouth. I’m sure the RHONY would totally dig them, but I don’t really think they eat. I saw some lobsters on the table at one point but I counted maybe like one or two bites total during that dinner scene. I would have eaten all the lobsters and then polished off these Hot Fudge Brownie Sundae Bites for dessert.
These bites of bliss are simple to make. I start by baking THESE brownies and then cutting out little circles using a biscuit cutter. Then I place each brownie round in a mini cheesecake pan. A mini cheesecake pan looks like a muffin pan but with removable bottoms, they’re pretty handy and I’ll be sharing more recipes using them soon. If you don’t have a mini cheesecake pan or don’t want another kitchen gadget lying around you can make these in a regular muffin pan just be sure to use durable cupcake liners so they don’t stick and tear when you pull them off. Back to the assembly…..I topped the brownie base with THIS vanilla ice cream and then stuck the pan in the freezer for an hour. Once they’ve firmed up, I dip them in a pan of warm water for a couple seconds to loosen them so they’re easy to remove. (You can skip this step if you’ve used cupcake liners.) Top each one with a healthy heaping spoonful of THIS hot fudge sauce, top with whipped cream, sprinkles and a cherry.
Hot Fudge Brownie Sundae Bites are the perfect dessert for a large crowd after a heavy dinner. They’re a great after school treat to celebrate the first day back. And they’re seriously epic for a long day of binge watching reality TV.
Get the Recipe: Hot Fudge Brownie Sundae Bites
Ingredients
- 1 recipe for Fudge Brownies, You could use a box mix if you prefer.
- 2 cups vanilla ice cream
- 1 cup hot fudge
- Whipped Cream, for topping
- 18 maraschino cherries with stems
- Sprinkles for garnish
Instructions
- Bake the brownies according to the directions in a quarter sheet pan (9x13) and allow to cool to room temperature. Using a 2 inch biscuit cutter, cut out 18 brownies and place them in the bottom of the cheesecake pan. Spoon the softened ice cream on top of the brownies until each cavity is filled. Place the cheesecake pan on a baking sheet and transfer the whole thing to the freezer. Freeze for 1 hour or up to 36 hours.
- Remove from the freezer and fill a sheet pan with warm water. Place the cheesecake pan in the water for 10 seconds and then push the brownie bites out of the pan by pushing up on the bottoms. Arrange the brownie bites on a sheet pan and return to the freezer for 15 or until ready to serve.
- Right before serving, top each brownie bite with hot fudge sauce, whipped cream, sprinkles and a cherry. Serve immediately.

THe good thing about this recipe is that it facilitates people being on a diet. I always want to eat a giant bowl but with this size you can still be on a diet and have a little chocolate.

I am totally that way when it comes to Friends! I have seen them over and over but still love to watch them! I am loving these bites! Prefect for this time of year!
I love all the RH shows. I just wish they would call them sitcoms instead of reality TV. Nothing realistic about them. Ha. I watch them to giggle. A lot. Makes me feel so normal.

I never got into Real Housewives but that’s not to say I haven’t wasted a day marathoning a show. Sometimes you just have to do it. Now only if I had these by my side next time I have a netflix marathon!

I know what you mean! I just binge watched Hoarding: Buried Alive. It’s like watching a train wreck – I couldn’t drag myself away! Only wish I had one of these little treats to enjoy while watching. (Or maybe not – some of those episodes aren’t really conducive to eating – yuck 🙂 )
