10-Minute Samoa Cannoli
Crispy cannoli shells are stuffed with sweetened ricotta and crushed “Caramel Delite” Girl Scout cookies for a unique twist. These Samoa Cannoli take just 10 minutes to make and 30 seconds to devour.
I find it ironic that Girl Scout cookie season is the exact same time as “Holy crap, I have to lose 20 pounds” season. Really. Just as soon as I get into the swing of healthy eating and working out semi-regularly….the doorbell rings. And I always hope it’s a present or something that’s been on backorder for 2 years ready to surprise me, it’s always a pint-sized sales person with a wagon full of cookies. Part of me wants to jump with joy, part of me wants to slam the door in their face. I know…harsh, but I can’t have the cookies in my house because I’ll eat one…..and then another and another until the box is completely empty. I then find myself peering out the window every few minutes to see if they’re still wandering around the neighborhood in sub-zero temperatures….come back, come back. It’s a terrible scene and I’m sorta embarrassed I’m even sharing this.
And then I go to the grocery store….and they’re there. Like the Salvation Army guy with the bucket ringing his bell….those mini crack peddlers are there….”Would you like to buy a box of cookies?” Are you kidding? A box? I’ll take the whole dang table, please and thank you! And even if I bought the whole lot, they will be there tomorrow and the next day and the next. I wish they weren’t there…I wish they would just go away…and then they do. On some mysterious day, they’re gone. FOREVER. And I miss them immediately, I start going through withdrawal and wish I bought more cookies to freeze….how will I make it through the rest of the year????? Panic sets in. This happens every year. It’s a bit of a problem.
So, this year I bought a bunch of cookies and decided to make a few things. Like Samoa Cannoli….Samoa Cannoli. It’s now a thing and they are ridiculous I tell you. Let’s talk about Samoa’s, shall we? Can I tell you that not one place on the box does it say Samoa? They’re called Caramel Delites but everyone calls them Samoas so I shall too. But Caramel Delite is what I remember from back in the day when I was a Girl Scout (I was actually a Brownie…I never really made it to Girl Scouts, I’ll share the story later.) Anyway…I made cannoli with crushed up Samoas and they were one of the best things I ever made. Period. (.)
I made these in just about 10 minutes and then I ate one. And another. And another…..and then I packed them up and shipped them to school with Katie. I was going to eat all the cannoli, they’re like crack. Just for the record, I’ve never tried crack but I hear it’s addictive and that’s what these Samoa Cannoli are. AND part of the problem is they’re mini so they don’t seem like they’ll be as damaging to the waistline but the fact is….they are and you’ll eat 20 of them before the day ends. These are for sharing….unless you have the metabolism of a 12 year old, then indulge and eat all of them.
Get the Recipe: 10-Minute Samoa Cannoli
Ingredients
- 10 samoa/caramel delite girl scout cookies
- 2 cups ricotta cheese
- 1/2 cup confectioners' sugar
- 1/4 cup heavy cream
- 24 mini cannoli shells
- 1 cup chopped dark chocolate
- 1 cup caramel sundae sauce
- 1/2 cup toasted coconut flakes, crushed
Instructions
- In a food processor, pulse the girl scout cookies until fine crumbs form. (Be careful not to over process or they will become a big ball of goo.) Transfer to a medium bowl. Stir in the ricotta and confectioners' sugar. Set aside.
- In a separate bowl, beat the heavy cream until stiff peaks form. Fold the cream into the ricotta mixture until blended and transfer to a piping bag or ziplock bag with the corner snipped off. Pipe the mixture into the cannoli shells and place on a wire rack.
- Melt the chocolate in a microwave safe bowl in 30 second increments until smooth. Transfer to a ziplock bag and snip off the corner. Drizzle the chocolate over the shells.
- Warm the caramel sauce in the microwave for 20 seconds. Transfer to a ziplock bag and snip off the corner. Drizzle the caramel sauce over the shells. Sprinkle the cannoli with the coconut and allow the toppings to set.
- Store in an airtight container in the refrigerator for up to 24 hours or enjoy immediately.

Hahaha I was a brownie that never made it to girl scouts either! I love Girl Scout Cookies but try to keep my distance because I’ll eat them all! These however…I don’t think I could stay away!

I would not be able to resist this as Samoa’s are my favorite GS cookies and this looks fantastic. My girls are no longer in GS…so I’m not tempted on a daily basis…I try to limit myself to one box per year.
